Really Quick Mixed Fruit Celebration Cake

There are many recipes for celebration fruit cakes – over the years I have used many. My celebration cake recipe is great but this year we were very busy in the shop and I simply ran out of time. This following recipe is quick, very quick – and it works every time……

The following ingredients are based on an 8” cake (22cm) but you can scale to any size. Also this recipe is very low cost and just looks expensive.

This method is simple – Assemble the following ingredients:

  • 475 g Quality fruit Mincemeat
  • 750 g Dried Mixed Fruit
  • 250 g Butter
  • 125ml Brandy or Sherry
  • 200 g Dark Brown Sugar
  • 4  Eggs lightly beaten
  • 300 g Plain Flour
  • 2 Teaspoons Mixed Spice
  • Some extra Brady or Sherry
  1. Preheat Oven to 150C (130C for fan assisted ovens)
  2. Line a deep 22cm cake pan with two layers of baking paper that is 5cm above the edge of the tin
  3. Combine the mincemeat, dried fruit and Brandy in a large microwave safe bowl and cover
  4. Cook on high for four minutes, stirring once – uncover and leave to cool (30 mins)
  5. Stir in Butter and Sugar until combined
  6. Stir in the Eggs and sifted dry ingredients
  7. Spread mixture into the pan and flatten the top
  8. Bake uncovered – approx 3 ½ hours and then brush cake with extra Brandy
  9. Cool in Pan

This cake will last three months stored in an airtight container
